Introducing Mr. & Mrs. Nicholas

Yesterday Nick and I found "bike computers" on clearance at Target for $10! After Nick installed, we logged 8.5 miles and raced to set our own personal best Max Speed, info saved to beat later. We explored the opposite end of the bike path. Led even farther than expected. Lots of new ideas of where we can ride our bike to. For example, bowling. To pizza. To Mexican. That might defeat the purpose of the biking!

We've been discussing healthy meal ideas as Nick's mom was recently diagnosed with diabetes and is in fact still in the hospital :( Type II diabetes runs in my family also. I'm motivated to keep myself and Nick healthy for each other as long as possible, so nutrition and exercise are important to me. (As well as Nick actually kicking the habit once and for all, but that's a different battle...) Anyhoo, Nick had a great idea to take time every weekend to write out our meal ideas for the week. This way we won't resort to takeout or mindless, starved eating like on the nights (M, W, F) I work late. He said he'll know the plan and can get it started. I love that man!

So here's what we've got so far, using what's already in our fridge and pantry-

ADD MEALS

We got in a little time in the dirt scoping the garden. I was a weed-asausus as proclaimed by Mr. Nicholas. I got right on the ground while Nick worked smarter with his hoe-like tool with the blade. Have you used these? It's amazing. Cuts the roots just under the soil, no pulling.

His (disgusting ;) tomatoes are doing nicely. Next year we'll build more armature for them. This is the largest they've gotten with our soil! I planted some late summer radishes, snowbird peas, mesclun mix, and spinach. I was so excited to find leftover peas because I really missed them in the garden his year. They were the seeds that grew the best in past years despite out tough clay soil. Mr. Nicholas has toiled hard year after year amending the soil and roto-tilling. We've finally got a nice plot :) Job well done husband.
